We have been running our chocolate classes since 2015. We use the downstairs classroom of the Thoughtful Bread Company in the centre of Bath This is a dedicated space that the bakery uses for their bread making classes and so has everything we need. It's also a very convenient location to reach.
Our masterclass runs from 9.30 to around 4.00. After a brief intro over coffees and pastries from the cafe upstairs we begin by having a short tasting session of different chocolates from around the world, comparing their flavours and discussing their differences. You'll then be taught the process of how chocolate is made, from raw beans through to the final chocolate bar. Then we'll roll up our sleeves and get busy. You will be shown how to make a caramel and we'll make different ganaches from cream and butter and a vegan option too. We'll pipe these into moulds and decorate different shapes by hand to fill with chocolate. Once all that's done we'll have some well-earned food, enjoying a communal lunch upstairs. After lunch you'll be taught different tempering techniques then we'll finish off our moulded chocolates and hand roll and decorate some truffles.
Everyone takes home a selection of all the chocolates made. No experience necessary. Maximum group size of 8. Minimum age 12.
