The beans from this bar come from the cooperative XOCO which operates its own farm and fermentary and purchases wet beans from smallholder farmers in North & Central Honduras. The variety of bean is called Maya red and is known for its distinctive flavour profile of low acidity with notes of red fruits. As the cocoa nibs and sugar are grinding we add freshly roasted ground cardamom and espresso coffee from Roundhill Roastery in Somerset. The smell as the grinding continues is out of this world!
