For this chocolate we use a product called Zusto as a replacement for sugar. It includes dietary fibres from corn and chicory as well as sugar substitutes. The result is a product that tastes like sugar but contains 75% fewer calories, and has a low glycemic index of 22, meaning that it is suitable for diabetics.
We have paired it with deep, flavoursome beans from cooperative farming communities along the Ucayali River in the Amazon rainforest of Peru
